
Recipe for Sopapilla Cheesecake
Sopapilla Cheesecake is thought to have originated in the Southwestern United States, specifically in New Mexico. It is a fusion of two traditional Mexican dishes: sopapillas and cheesecake.
Sopapillas are fried pastry puffs that are often served as a dessert or snack and are a staple in Mexican cuisine. By combining the sweet, flaky pastry with creamy cheesecake filling, the Sopapilla Cheesecake was born and has since become a popular dessert across the United States.
Sopapilla Cheesecake:
Ingredients:
- 2 (8 oz) packages of cream cheese, softened
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 (8 oz) cans of refrigerated crescent rolls
- 1/2 cup melted unsalted butter
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- Honey, for serving (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract together until smooth.
- Roll out 1 can of crescent rolls and press them onto the bottom of the prepared baking dish.
- Pour cream cheese mixture over the crescent rolls.
- Roll out the second can of crescent rolls and place them on top of the cream cheese mixture.
- Brush melted butter over the crescent rolls.
- Mix 1/4 cup sugar and cinnamon together and sprinkle it over the melted butter.
- Bake for 25-30 minutes, or until the top is golden brown.
- Serve warm with honey (optional).
