Ingredients:

  • 3 large eggs
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 325°F (165°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat cream cheese until smooth.
  5. Add 1 cup sugar, eggs, vanilla, salt, heavy cream, and lemon zest; beat until combined.
  6. Pour mixture over crust in pan.
  7. Bake for 55-60 minutes, or until the center is just set.
  8. Allow to cool completely.
