Ingredients

  • 4 large bell peppers, halved lengthwise and seeded
  • 1 teaspoon olive oil
  • 12 ounces fully cooked smoked sausage, diced
  • 2 cups cooked rice
  • 2 cups chopped baby spinach
  • 1 cup prepared Alfredo sauce
  • 1/3 cup grated Parmesan
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella
  • 2 tablespoons chopped parsley

How to Make Smoked Sausage Alfredo Stuffed Peppers

  1. Heat the oven to 375°F. Arrange pepper halves cut-side up in a baking dish and brush lightly with olive oil. Bake 10 minutes.
  2. Meanwhile cook diced smoked sausage in a skillet over medium heat for 4 to 5 minutes until lightly browned.
  3. Stir together sausage, rice, spinach, Alfredo sauce, Parmesan and Italian seasoning.
  4. Fill the partially baked peppers with the mixture and top with mozzarella. Add 1/4 cup water to the bottom of the baking dish and cover loosely with foil.
  5. Bake 15 minutes covered, then uncover and bake 10 to 15 minutes more, until the peppers are tender and the filling is hot. Garnish with parsley.

Recipe Tips

  • Use fully cooked sausage so the filling only needs to heat through.
  • Do not overfill with sauce; too much can make the filling loose.
  • For firmer peppers, shorten the first bake to 5 minutes.

Storage and Reheating

Refrigerate up to 4 days. Reheat covered at 350°F or in the microwave until hot.
