How to Make Smoked Gouda Mac & Cheese with Crispy BBQ Onions

  1. Heat the oven to 375°F. Lightly butter a 9-by-13-inch baking dish.
  2. Cook the macaroni in well-salted water until 1 minute shy of al dente. Drain.
  3. Melt 3 tablespoons butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk and cook until lightly thickened, 4 to 6 minutes.
  4. Remove the pan from the heat. Whisk in Dijon, garlic powder, salt and pepper, then stir in the Gouda, cheddar and Parmesan until smooth.
