Honey Miso Glazed Chicken
The Fusion Movement The combination of miso with honey and Western-style roasted chicken emerged during the late 20th century fusion cuisine movement. Japanese-American chefs in California during the 1970s and 80s began experimenting with traditional Japanese flavors in Western cooking techniques, creating what we now call “Nikkei” or Japanese fusion cuisine.
This Honey Miso Glazed Chicken fusion recipe combines the umami richness of miso with sweet honey and aromatic garlic-infused rice for a restaurant-quality meal at home. The chicken develops a beautiful, caramelized glaze while staying incredibly juicy inside.

Essential Cookware & Utensils
Large Cast Iron Skillet – Perfect for achieving that gorgeous caramelized glaze on the chicken while maintaining even heat distribution. The heavy bottom prevents hot spots and creates beautiful browning.
Medium Saucepan with Tight-Fitting Lid – Essential for cooking the rice properly. The tight lid ensures the rice steams perfectly and doesn’t dry out.
Digital Meat Thermometer – Takes the guesswork out of cooking chicken safely. You’ll want to ensure the internal temperature reaches 165°F for food safety.
Silicone Basting Brush – Ideal for applying the miso glaze evenly without scratching your cookware. Heat-resistant silicone won’t melt or retain odors.
Fine Mesh Strainer – Perfect for rinsing rice until the water runs clear, which is crucial for fluffy, non-sticky results.
Microplane Grater – Makes quick work of fresh ginger and creates the perfect fine texture that distributes evenly throughout the glaze.
Instructions
- Prepare the rice: Rinse jasmine rice in the fine mesh strainer until water runs clear. In your medium saucepan, combine rice with chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes.
- Make the glaze: While rice cooks, whisk together miso paste, honey, rice vinegar, soy sauce, minced garlic, grated ginger, and sesame oil in a small bowl until smooth.
- Season and sear chicken: Pat chicken thighs dry and season with salt and pepper. Heat your cast iron skillet over medium-high heat. Place chicken skin-side down and cook for 6-7 minutes until skin is golden and crispy.
- Flip and glaze: Turn chicken over using tongs. Brush generously with the miso glaze using your silicone brush. Continue cooking for 8-10 minutes, basting every 2-3 minutes.
- Check temperature: Use your digital meat thermometer to ensure chicken reaches 165°F internal temperature.
- Finish the rice: In a small skillet, heat vegetable oil over medium heat. Add sliced garlic and fry until golden and crispy, about 2-3 minutes. Remove garlic with a slotted spoon and set aside. Fluff finished rice with a fork, then stir in the crispy garlic and its oil.
- Serve: Plate the garlic rice, top with glazed chicken thighs, and garnish with green onions, sesame seeds, and any remaining crispy garlic.
Chef’s Tips
- Don’t move the chicken too early when searing – let that skin get properly crispy first
- Save some of the miso glaze for drizzling over the finished dish
- The rice can be made ahead and reheated – just add the crispy garlic right before serving
- For extra flavor, marinate the chicken in the glaze for 2-4 hours before cooking
