Ingredients

For the Pasta:

Instructions

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Cook the tagliatelle according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. Prepare the Sauce:

    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    • Reduce the heat to low, then pour in the heavy cream and stir to combine. Simmer for 2-3 minutes to allow the flavors to meld.
    • Add the grated Parmesan cheese and mix well until melted and creamy. Adjust the consistency with the reserved pasta water if needed.
  4. Combine Pasta and Sauce:

    • Add the cooked tagliatelle to the skillet, tossing gently to coat with the sauce. Drizzle the truffle oil over the top and season with salt and pepper to taste.
  5. Serve:

    • Plate the pasta, garnishing with toasted pine nuts or walnuts, fresh parsley, additional Parmesan cheese, and microgreens or arugula for color and freshness.
