Friday Food Bites: Skillet Ends & Dad’s Coneys & Wraps-Inspired Wraps

As we say goodbye to beloved local eateries, let’s celebrate their flavors with a unique recipe that pays homage to the cherished dishes we’ve enjoyed over the years. These wraps blend the comfort of diner fare with the convenience of a portable meal.

Ingredients

For the Wraps:

  • 4 large flour tortillas (or wraps of your choice)
  • 1 lb ground beef or plant-based protein
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup coleslaw mix (cabbage, carrots, etc.)
  • ½ cup diced tomatoes
  • ¼ cup pickle slices (optional)
  • ¼ cup ketchup
  • ¼ cup yellow mustard
  • Salt and pepper to taste
  • Olive oil for cooking

For the Diner Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Garnishes:

  • Fresh parsley or green onions, chopped
  • Extra pickle slices

Instructions

  1. Prepare the Diner Sauce:

    • In a small bowl, mix together mayonnaise, ketchup, mustard, Worcestershire sauce, onion powder, salt, and pepper. Adjust seasoning to taste. Set aside.
  2. Cook the Meat Mixture:

    • In a large skillet, heat a drizzle of olive oil over medium heat.
    • Add diced onion and sauté for about 3-4 minutes until softened.
    • Stir in minced garlic and cook for an additional minute.
    • Add ground beef (or plant-based protein) to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes. Season with salt and pepper.
  3. Assemble the Wraps:

    • Lay a tortilla flat and spread a generous tablespoon of the diner sauce on it.
    • Add a scoop of the meat mixture, followed by cheese, coleslaw mix, diced tomatoes, and pickle slices if desired.
    • Fold the sides of the tortilla in and then roll it up from the bottom to seal the filling inside.
  4. Toast the Wraps:

    • In the same skillet (or a clean one), add a little olive oil and heat over medium-low.
    • Place the wraps seam-side down in the skillet and cook for about 2-3 minutes on each side until golden and crispy.
  5. Serve:

    • Slice each wrap in half and drizzle with any remaining diner sauce if desired.
    • Garnish with chopped parsley or green onions and serve with extra pickles on the side.
