From Classic to Contemporary
Servings: 4
Prep Time: 15 minutes
Cook Time: 20 minutes
Marinating Time: 1 hour (or overnight for best flavor)
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons honey
- Juice and zest of 2 limes
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional, for heat)
For the Avocado-Mango Salsa:
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1 small red onion, finely chopped
- 1 medium tomato, diced
- Juice of 1 lime
- ¼ cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
1. Marinate the Chicken
In a bowl, whisk together olive oil, honey, lime juice, lime zest, smoked paprika, cumin, garlic powder, salt, black pepper, and cayenne pepper.
Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
2. Prepare the Salsa
In a mixing bowl, combine the diced mango, avocado, red onion, and tomato. Drizzle lime juice over the mixture and gently fold in the cilantro. Season with salt and pepper to taste. Set aside to let the flavors meld.
3. Grill the Chicken
Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from heat and let rest for 5 minutes.
4. Serve
Slice the grilled chicken and serve it topped with a generous spoonful of avocado-mango salsa. You can garnish with additional cilantro and lime wedges if desired.
Suggested Sides
- Cilantro-lime rice
- Grilled vegetables
- Mixed green salad with a light vinaigrette
Cooking Tips
- For added depth, char the salsa ingredients (except avocado) on the grill to enhance flavor.
- If you prefer your chicken crispy, finish it off in the oven at 400°F (200°C) for the last 5 minutes after grilling.
