Ingredients:

Cake Layer:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 2 tablespoons coffee liqueur (optional)
Pastry Cream:
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 4 egg yolks
  • 1/4 cup cornstarch
  • 1 tablespoon unsalted butter
Salted Caramel Glaze:
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 teaspoon sea salt flakes

Instructions:

Cake Layer:
  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack. Once cool, slice the cake in half horizontally. Sprinkle the coffee liqueur over both layers if desired.
Pastry Cream:
  1. In a saucepan, heat the milk over medium heat until it starts to steam but not boil.
  2. In a separate bowl, whisk together the sugar, vanilla, egg yolks, and cornstarch.
  3. Slowly add the hot milk to the egg mixture while continuously whisking to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
  5. Remove from heat and stir in the butter. Let cool, then refrigerate until set.
Salted Caramel Glaze:
  1. In a heavy-bottomed saucepan, melt the sugar over medium heat until it becomes amber in color.
  2. Remove from heat and carefully stir in the heavy cream, followed by the butter.
  3. Return to low heat and stir until smooth. Add sea salt flakes and mix well.

Assembly:

  1. Place one layer of cake on a serving platter.
  2. Spread the pastry cream evenly over the cake layer.
  3. Place the second cake layer on top of the pastry cream.
  4. Pour the salted caramel glaze over the top layer, allowing some to drip down the sides.

Chill for at least 2 hours before serving to allow the flavors to meld together.
